Mediterranean Stuffed Chicken Casserole

One dish, easy and fuss free - who said healthy means boring?

Ingredients (Makes 2 servings)
2 Chicken breast
1 Tin Tomato Passata
Chestnut Mushrooms
2 Garlic Cloves
1 Cup Fresh Spinach
1 tsp Chilli Powder (optional)
2 tbsp Feta Cheese
1 Carrot Cut into Chunks (optional)
Pitted Olives (optional)

Method
1) Pre heat the oven at 200. Cut the breast length ways to make a pouch for the stuffing.
2) Stuff the chicken with 1 diced garlic clove, feta cheese and spinach. Close the breast pushing down gently, ensuring the filling stays in (a toothpick always helps to keep it closed, but provided that you cut the pouch nicely it is not necessary)
3) Place chicken into baking tray lined finely with extra virgin olive oil. Sprinkle on top seasoning of your choice i.e. some pepper, oregano, coriander, parsley and even chilli powder (to taste).
4) Around the chicken place the carrots, mushrooms (and/or other vegetables that you like)
5) Pour the tomato passata evenly to cover all ingredients in your baking dish. You could even sprinkle some extra feta on top.
6) Bake the chicken for around 40 mins (or until piping hot and fully cooked inside).
