Honey-Oat Mini Muffins

A delicious healthy alternative to satisfy a sweet tooth.

It takes around 30 mins to make. Quick, easy and delicious.

Ingredients


2 bananas

2 eggs

4 sachets (27g each) Quaker oats

1/4 cup almond milk

1 tsp baking powder

2 tbsp honey

optional : handful peanuts

optional: 1 tbsp peanut butter


Method


1) Preheat the oven at 180.

2) Blend all ingredients together in a food processor.

3) Line cupcake tin with a small amount of butter or coconut oil to aid non stick. Pour the mix evenly into your cupcake tray.

4) Sprinkle some oats on top and lightly drizzle some honey over the top

5) Bake until browned and no longer loose or wet on the inside.

6) Leave for a few mins to cool before removing them from the tin.

7) Serve them warm with a herbal tea
